Where do I find inspiration?

My inspiration comes from my motivation, determination that provokes my passion. You know how every person in a kitchen talk that it came from the family, they either own a restaurant, or that their grandmothers baked, and so on so forth. Well, for me it was completely different, this field found me. When I was in high school I was determined that I wanted to be a layer, I had applied for law school, and got accepted, and I was working in a law office. When christmas vacation came, I was stuck in an office filing paperwork, not happy at all. I remember that night I came home and started baking a chocolate cake. When I was done I didn't left it there, I went ahead and made a filling and in seconds I was getting all elaborated on it. When I was finally done, it was around 5 am, so much time passed and I did not felt it. This was the first moment when I felt in love with the kitchen. I used to cook for my family every weekend, but once I started baking nobody would do it with more love than I. As days passed I grew more and more into baking and realize that the office wasn't for me. At the end of the day I wanted to try something new, original, unique; pushing myself to the limit. With this my passion started to grow, the happiness that I brought to everybody but just giving them something sweet felt amazing. You could see it right there, in the middle of the day, I observe in one place; how a mother compensates good behavior of her kids with chocolate chip cookies; how a soccer team celebrates its victory with chocolate bars; how an ice cream can create a smile on a broken heart; how a cup of coffee breaks the ice; how a piece of cake completes a lunch break form long hours in an office. The satisfaction of accomplishing something that I originally thought it was impossible, was mind blowing. So if you as me where does my inspiration come form, is the motivation to do something new or traditional, yet in the best possible way I can do it. The passion for loving what I do. Finally, overcoming my last work with a better one, a non stop fight with myself. Inspiration can be consider anything, but its nothing if you don't have the fire inside of you.

If you had asked me this question a few days ago, I would have said that there is no need to go any deeper in what you have already learned in class for the past two years. Today, I realize that going deeper is experimenting, learning, creating and improving. Experimenting: for you are pushed out of your comfort zone looking for new challenges to overcome. This might come from one of the chefs or it can come from that fire that is inside of me. For example, I was instructed by my Chef to come up with a dessert including two ingredients, olive oil and basil. As a sweet chef apprentice this jumps to savory, nothing to do with pastry, outside of my area of expertise. Thinking of what I could do, I started to think of flavors that would go well with the instructed ingredients; olive oil can replace the fat of a cake mixture and in order to improve the flavor of it, is the fat of almonds.
